Weekly Low Carb Wrap Up - Week Nine

I have to be honest, I had a lazy week, ate some things I shouldn't have eaten but all in all tried to stick with the program. I think it's just the fact that the weather has gone crazy here! Can you believe it's almost 100 degrees today, Mothers Day! And it's only May! That doesn't bode well for the rest of the summer!

I had thought to try to BBQ today for Mother's Day but since I knew it was going to be 100 degrees I instead made a Doritos Chicken Casserole. Trust me, this is in no way a low carb dish, but I made it for my son as a special request, cause isn't that what moms do?

Doesn't that look yummy? Trust me it was. I have to admit I had a bite, ok...more than a bite but less than the whole casserole dish...promise. It is Mother's Day after all!

Back to the wrap up though. Early on in the week I made those wonderful Easy Cajun Chicken Drumsticks and that's pretty much what I ate for lunch the whole week. I also ate a lot of hard boiled eggs and Foster Farms Chicken Wieners for snacks. I ate some avocados and steamed zucchini and roasted asparagus throughout the week, so I stayed in the eating plan, I just didn't make anything new and exciting. 

But I do want to have something interesting to blog about especially for those of you that may be following my weekly wrap-ups just to get ideas on what else you can eat low carb. Many of you who follow me on facebook thank me for sharing these recipes so let me tell you now that they definitely are not my inventions! As I've said before when it comes to cooking I am strictly a "cook by the recipe" kind of cook. I may occasionally tweak a recipe here and there but I've never truly invented a low carb dish.

Lucky for me there are dozens of great low carb bloggers out there that share wonderful recipes, tips and ideas and I always give them credit in my posts but today I want to list a few for you so you can go visit them, show them some love and if you want to tell them I sent you that would be just great!

1. I Breathe...I'm Hungry  - This is one of my favorites for great recipes that are easy and do-able and I usually have the ingredients for. I found the recipe for the Easy Cajun Drumsticks on her blog! Mellisa Sevigny is the brains behind this blog and I love her recipes so much that I bought her online cookbook, The Gluten Free Low Carber! At $9.95 it's a deal and a steal!

2. Linda's Low Carb Menus - You can't be a low carber and not have heard of this amazing blog! I have made many of her recipes, her Make Me Stuffed Peppers, her Broccoli Slaw, and my co-worker has made her No-Bake Jello Cheesecake many times! Her website is very well organized and has photos which I always love to see so I know how close I am to the original when mine is done.

3. Living Low Carb One Day At a Time - Really this is what I do, just take it one day at a time and if I mess up I don't beat myself up, I just continue on...one day at a time! My co-worker made her Tuscan Chicken Soup and it was wonderful! Everything a soup should be, hearty and filling and comforting, yet low carb. I have pinned lots of her recipes to try in the future but you can just head on over there and try some for yourselves...don't wait for me!

So there you go, three great websites to visit if you are interested in eating healthier, low carb, paleo or gluten free!

Hoping the weather cools down so I will have the energy to try some new recipes this week but I'm not promising anything because not only it is going to be hotter than hell around here this next week but my co-worker will be on vacation the whole week and that means double the workload for me, so I'm going to be one busy and tired and hot little puppy!

Weekly Low Carb Wrap Up - Week 3

     Darn it! I have to get better at this! I've been doing this low carb wrap up for a few weeks now and I'm not getting any posting done during the week. I think I'm going to have to start posting this stuff on a daily basis for two reasons: 

1. It will make for more posting throughout the week. 
2. I forget what stuff I made during the week and comments I wanted to make on it.

     I'll do the best I can during the week since it is American Idol season and I love them and won't miss it for anything in the world!

     Have you all been hearing about the health benefits of Kale? I know I have, and aside from the health benefits I've been told that Kale Chips are the next best thing to Tortilla Chips. May I just tell you right now that is  a big fat lie  a bit far-fetched! Yuk! Kale Chips are not the thing for me! Now those of you that love them, don't hate me, they are just not for me, just as Seaweed Chips are not for me even though I know those that love them.


     The photo above is where they are all washed and dried and seasoned and ready to be baked. I used the recipe from the very excellent low carb blog, I breathe...I'm hungry...

     I'm pretty sure it's not the fault of the recipe or the blog or the blog creator, Mellissa Sevigny, it's just that kale chips are not for me, just like I don't like mushrooms, it's just a matter of personal taste.

     I baked them just as she instructed and tasted the ones that burned a little bit and tasted the ones that were perfectly crisp and nope...not for me. I want to think that maybe it was the Soy Sauce or the Sriracha Sauce so I am going to try to make it one more time with a different recipe that just calls for olive oil, salt and pepper. I'll let you know what happens.

     One new item I did try this week is the new Atkins Frozen Meals. I tried the Crustless Chicken Pot Pie. I gotta say, it wasn't bad. It didn't taste like a pot pie, but the chicken was fresh and delicious white meat with a very nice tenderness, not dry at all. The veggies were pretty good and the sauce was rich and gooey. It didn't seem like a lot at first and I didn't know if I was going to get full, but it was very filling due to the fact that there was quite a bit of chicken and the pieces were pretty big. I would definitely recommend this and I will be buying it again. Right now Wal-mart is the only store carrying them and of course, they don't carry them at the store I go to!

     Atkins has a whole line of them and I also purchased the Italian Sausage Primavera which I will probably try for lunch tomorrow. You can see their whole line on the Atkins website


     I tried another new thing this week, I tried making Buffalo Roasted Cauliflower. I used a recipe from a new blog I've found via Pinterest. The blog is called Closet Cooking because the blog owner, Kevin is "Cooking in a closet sized kitchen".

     Again, I don't blame Kevin for my not being thrilled with the recipe, I think that I just don't like roasted Cauliflower. I love Cauliflower, but just not roasted. I may try it steamed as I did like the flavor of the buffalo sauce.

     I served the dish alongside a favorite dish of mine that my mom makes, you can see it below. She chops up steak and pan fries it in oil and when it's done she adds chopped tomato and jalapenos and it's almost like a steak fajita except there is no onion as mom can't stomach onion (I love, love, love onion!). See those burnt parts on the cauliflower? Those parts are supposed to have a delicious nutty taste, they just tasted burnt. You can't see the buffalo sauce very well, I actually added more later.


     That night I went to bed wondering what to do so I wouldn't waste the rest of that cauliflower. Voila! Overnight a wonderful idea came to me, why not fry it up with some scrambled eggs? Hence is born my Scrambled Egg Buffalo Roasted Cauliflower! 

     The egg really cut down on the burnt taste and the marinating overnight of the cauliflower with the Franks Red Hot Sauce made for a spicy delicious breakfast. It made enough for two servings and I put it in plastic containers and enjoyed it two mornings at work. The office smelled awful, but we opened the door and aired it out and it was ok. I recommend this dish if you love spicy. Just make Closet Cooking's Buffalo Roasted Cauliflower and chop it into bite-sized pieces and heat it in a pan with some butter and olive oil, then throw uncooked scrambled egg in and cook to your desired egg consistency. Yum!


     Now...let's see, what else did I try this week that was new and exciting? Oh yeah! I made a pork tenderloin that was to die for!! I almost killed my mom making it but she said the flavor was almost worth it. I used a cast iron skillet on the stove top and seared the whole tenderloin while it had the dry rub on it. Because of the Cayenne Pepper in the dry rub, it makes it noxious to breath. It didn't bother me but it drove poor mom out of the house!


     I've actually made this dish before and blogged about it here. My daughter found this recipe a while back and asked me to make it for her. The original recipe was adapted by a recipe from the blog, Little B Cooks: Chronicles from a Vermont foodie, quite a title!

     The first time I made it I used the exact recipe as Little B posted on her blog, but when I went to go get the recipe out of my little personal cookbook where I write down recipes I like, I noticed that I had jotted down some notes. I said my family didn't care for the cinnamon and to leave out the glaze if making low carb as it does have brown sugar....so I did that, it was smack your mama delicious! I believe I served steamed broccoli with it, but I don't remember now.

     And my co-worker, who loves to cook and try new low carb dishes made a tasty little dessert for us and she brought them to work and we had one every day for our 3pm break. They are these delicious  creamy little bites of heaven! It's called No-Bake Jello Cheesecake and it has just 3 carbs each! Really satisfies a sweet tooth! She found the recipe on a really excellent low carb website, Linda's Low Carb Menus. I love this site!


         Can you believe they are made with just 4 ingredients, one of them being water? Unbelievably delicious!

       So that was my week! Hopefully I can do even better in trying out new things this next week. I'm also going to try to cut down on my carbs from 20 -24 to 17 -20 carbs per day as I'm stalled right now and haven't lost any more weight. I feel lighter and my clothes fit better. Health wise I feel great! No indigestion or that yucky bloated feeling after eating, but it's always nice to see that scale drop too. So wish me luck and if you have any low carb ideas for me, I'd love to hear them!

     Oh yeah...my co-worker and I also started walking during our lunch hour. She can walk for miles, but then again she's the same age as my daughter. I made it almost a mile and then told her she had to go get the car...hahaha. No I made it back to the office but I guess I bit off more than I can chew and need to ride my stationery bike more before I tackle a mile again...but it's a start!

Abuelita Chocolate - Low Carb Style


For some reason my mom only made her homemade  Hershey's Cocoa when it was raining. She would send my dad to go and pick us up at school, she didn't trust the bus driver to drive us when it was raining and the roads were slick.

We would come in, cold and wet and smell the cinnamony goodness of her cocoa. It was so thick and creamy and delicious. It hit the spot on a cold day. She would serve it in a bowl instead of a cup and we would sip it slowly with a spoon, that's how thick and delicious it was! Mmmmm!



I have only found one product that is almost as good as the one my mom made. It's Abuelita Hot Chocolate, and while you can make it from scratch with chocolate blocks, I love that they make it in an instant. But alas...the carb count is a killer! Each envelope has 19 net carbs. When you are trying to stay within 20 to 24 carbs per day, then having this is out of the question. 

Today I was lucky enough to find a lower-carb hot chocolate. I found this recipe at Radical Geekery. The Radical Geek calls it Hot 'Cocoa'nut Milk and she uses coconut milk, water, vanilla extract, cocoa powder and maple syrup.



I tweaked it a bit to bring the carb count down. I used Goya Coconut Milk, Water, Vanilla Extract, Hershey's Cocoa Powder, granulated Splenda for sweetness and cinnamon to help make it as good as my mommy's. 

I went ahead and used the whole can of coconut milk and did the math to figure out how much of each product to use and I have to say, it's wasn't bad. Not as good as my mom's, not as good as Abuelita, but definitely hearty and heart-warming. I drank a small cup and then poured the rest into a container and I'm going to keep it in the fridge so I can warm up a little bit whenever I have the urge. I may also try to add it to coffee as I love chocolatey tasting coffee. 

Here's the nutrition facts. As you can see it's still 9.2 net carbs, but that's certainly much more doable when you're counting carbs and just crave a sweet treat. And as cold as it has been here lately this really hits the spot!



Speaking of loving chocolate in my coffee, I found this great product. It's Nestle's Coffee-mate sugar Free Creamy Chocolate. 

The best thing about this product is that it only has 1 carb per teaspoon!! I put 3 teaspoons in my coffee each morning.

You can also find sugar-free Hazelnut and French Vanilla and Vanilla Caramel. They need to invent a Raspberry Vanilla and a Dulce de Leche, Ohhhh and a Creme Brulee! That would be heavenly. I've kind of been wondering what it would taste like if you whipped this up with heavy whipping cream? Hmmm, might have to try that one.

New Kicks!

Well another busy weekend in which I did a lot of stuff. I shopped alot, ate a bit and didn't get one thing done at home. Ok, wait! I forgot, I did get all my bedding washed, so that's quite an accomplishment considering it seems that I was hardly home all weekend.

I mentioned in my last post that I was going to look for some sweaters to make some adorable sweater pillows. Alas...not a cute sweater was to be found at Goodwill this week. But I am nothing if not a hunter and I shall be out there again next weekend shifting through clothing racks and looking for the perfect sweater to make a pillow out of!

I also got my grocery shopping done and bought all kinds of things to keep my new eating plan going. Not going to go into that right now, let's just say it's low-carb and I've already lost 8 pounds! Yay! I had a great lunch yesterday with my mom and a great lunch today with both my mom and my sister and best of all I got some new kicks! (Shoes for those of your not as cool and with it as I am.)

 
 
Aren't the just adorable? No I don't mean my cute little feet, I mean the shoes. I just love them. So comfortable and they just make you feel like you have a continuous massage going on! I love the color too. My sister bought a pair because Sketchers had a buy one get one half off sale, but hers are black. We both love them and wore them out of the store! I highly recommend them if you need good shoes to kick around with on the weekend! Sketchers claims they are walking shoes and while they are comfortable for walking, just make sure you only walk on a smooth surface, I wouldn't recommend them for hiking.
 
My next buy after I save up some more pennies, nickels, dimes and quarters are these.....
 
 
I just love the green color and they were so super comfortable! My mom also got two pairs of shoes and she was like a kid in a candy store and couldn't decide which ones she wanted.
 
So there's my weekend. It was a pretty great one and now I'm going to go finish watching The Golden Globes and have some dinner.

A Great Way to End the Year!

I've had many good trips and fun times in 2012.

Some of them I blogged about, some of them I never got around to blogging about.

About two weeks before Christmas my sister and I took a drive to Santa Clarita to get some Christmas shopping done. Santa Clarita is about two hours south of Bakersfield. When we got there we happened to notice on the way out of town that there was a huge Goodwill Store right there on Lyons Avenue and we both said, "Look, Goodwill! We need to bring mom!"

My mom loves thrift stores and I've learned to love them as well through her. My sister Lisa...not so much. So today, we had nothing to do other than the normal grocery shopping, vacuuming, mopping, dusting, laundry, you know...all the normal stuff that we do on the weekends to get ready for the next week...so we took mom to Santa Clarita instead.

That in itself is not such a big deal, the big deal was driving the Grapevine. The Grapevine is notorious for having bad weather during the winter months and earlier in the week the California Highway Patrol had to escort traffic through the mountainous area.

When we left it was a bit overcast here in Bakersfield, but we convinced my mom that the weather wouldn't be bad and that once we got over the mountain the sun would be shining. I guess maybe we should have checked The Weather Channel before we left.

We hit snow! Not bad snow, but snow none the less! I was driving and I have never driven in snow. Well I've driven in snow after it's on the ground, but not during a snow storm. Well this wasn't really a snow storm, mostly a lightly falling snow. But you can see the snow from earlier on the side of the road.


You know a weird thing that I never knew about snow? That when it falls it doesn't stick to and wet your car's windshield like rain does. I didn't even need my wipers. Now it may be that when it falls heavier that it does, but this one didn't.

Needless to say...my mom was not a happy camper! She doesn't like to go outside during the winter and doesn't even like to look outside. So to be in the backseat of a car at 5000 elevation with snow falling around her was sheer torture! We tried to tell her it wasn't that bad and this is a great adventure and something we will remember forever, but she wasn't buying it!


A couple of times I contemplated turning around and going back home because many times people get to the other side of the Grapevine and then it snows so much that the CHP closes the pass and you can't get back. You can go around but that adds hours to your trip. But I'm nothing if not stubborn. I figured the driving wasn't so bad. Everyone was going at a decent speed and I wasn't scared, so why not continue on and if we had to get a hotel room and spend the night in Santa Clarita, well then we would. This was an adventure after all!



I'm happy to say that we made it over the Grapevine. And it was sunny, a bit cold but sunny. We had a yummy lunch at Coco's and then took my mom to Goodwill. The Goodwill in Santa Clarita was a tad more expensive than our local Goodwills, but my mom still had a good time. I found an awesome cookbook, 1,000 Classic Recipes from Around the World! The sticker price on the front said $17.89 but I got it for $5.00. This book is like four inches thick and filled with pictures and super heavy! I can't wait to look at it and try some of the recipes!



I've also been collecting Jodi Picoult books, trying to get them all and I found another one today that I didn't have in my collection. Haven't read this one yet, have no idea what it's about, but I love Jodi Picoult books and can't wait to read it! And the sticker on the front says $8.43 but I got it for $1.99!



And my favorite thing I found was a silverware caddy. I had been looking for one for quite a few months now and hadn't found anything I really liked. My cousin Stella has a perfect one that I believe she got a Ikea or Pier 1 Imports, but I haven't been able to find one exactly like hers. This one is great because it has touches of green, my favorite color and the color of my kitchen curtains and it has butterflies, which I love and have several of all over my house.

I already got it all washed up and placed the silverware in it. Not sure this is going to work for me because the utensils tend to slip out of the bottom. I put some cupcake pan liners in there for now but I'm hoping to find some acrylic containers that might fit in there. See the butterflies and the ivy leaves? So cute!


So my sister, mom and I had a great day! I wish I had thought to take a photo, but let me share one of the three of us making Biscochos for Christmas this year.

Back to Work

This year I took a a couple of vacation days, the day before Thanksgiving and the following Monday, which is today. That made for a nice, long vacation. I had Wednesday, Thursday, Friday, Saturday, Sunday and Monday off and I am so not looking forward to going back to work tomorrow.

Wednesday I got up early and my mom and I went into the city (Bakersfield) and had a nice breakfast and hit a couple of Goodwill Stores. My mom and I love thrift store shopping! I was searching for Christmas decor but didn't find anything. After Goodwill-ing, we went grocery store shopping for Thanksgiving items, all the pie, stuffing and mashed potato fixings.

Once we got home and put everything away it was time to make the pies. We used to make the crust from scratch, but since frozen pie crusts have gotten so much better we use those, but we do make the pie filling from scratch...well from a can but that's from scratch for us!

Thursday of course was Thanksgiving and we spent the morning straightening up the house, getting the extra chairs all ready and making the stuffing and turkey, then the family arrived and we had a wonderful meal and enjoyed seeing each other all together again.

We barely remembered to take pictures. Here's my mom and standing next to her my sister Lisa and then sitting is me and my brother Fred and his youngest, Melissa, the baby in our family and isn't she beautiful!

After everyone left I spent about two hours getting everything cleaned and put away in my kitchen. Friday was a relaxing morning and then we all met in Bakersfield again to celebrate Thanksgiving with my dad. We took dad to Golden Corral because he loves buffets. I had a great time having all my family together again and I know dad really enjoyed it.

Here's the only picture I managed to get. This is my dad and on the right is my son James and on the left is my sister's son Isaac, who also is my Godson! Can you believe that my dad is 6 foot and both his grandsons are taller and bigger than he is???


Saturday I had to go and get new tires put on my car. My son James, (in the picture above) went with me. We had a great time considering we had to wait for two hours at Big O Tires! We spent the time playing Monopoly on his cell phone and I won!!! Of course he helped me to win and when I was almost losing he bankrupted and gave me all his money and property. Wasn't that nice of him?

Sunday I went on STRIKE and said I was not doing anything the whole day...and I didn't. I just watched movies on NetFlix and played on the computer and watched TV and read my book and chillaxed all day. My daughter's little puppy Chorizo was as exhausted and I was and laid on the little bed we've set up for her in my bedroom. Doesn't she look comfortable?



So today, the whole world went back to work...but not me :)

I decided to spend the day putting up the Christmas Tree and decorating the inside of the house. This year I decided not to put the Martha Stewart ribbon and garland that I love, love, love. I decided to try something different. I don't like it! Not sure if I am going to do it over or just live with it as-is for this year, but it's just too plain! I do love that where I put the tree this year it's reflected in the mirror, double the lights and sparkle....love that!


So tomorrow it's back to the real world and for once I'm not really looking forward to going back. I had a great Thanksgiving and a wonderful time being off. Can't wait for Christmas and tamale making and Biscocho baking!

FOOD...What is it good for? Absolutely Everything!

If feeding me and my brothers and sister as we were growing up had been left strictly to my mother then we would have eaten nothing but beans and tortillas morning, noon and night!! Ok, well maybe that’s a bit exaggerated, but seriously…if not for the fact that my dad was a meat and potatoes kind of man we would have starved!

See mom is a very picky eater, always has been, even as a child. Plus she doesn’t like to cook. She CAN cook…she can make some awesome dishes! She is a wonderful cook! Her chile colorado is to die for, as are her chili beans. But she dislikes cooking with a passion, probably because she dislikes eating. . .

Did your mouth just drop open in shock? How can anyone dislike eating? Well trust me she does. She eats because she has too. Food is not a big deal to her and she finds it frustrating to think of what to cook. And when she does cook she’s so sick of the smell of the food while it was cooking that she can barely manage to eat a bite or two. And leftovers?? Forget about it! She’s not touching leftovers!

My dad on the other hand will eat your arm if you don’t move it out of his way quick enough. I can remember him coming home in the mornings and my mom would make him breakfast. She would make him three or four pancakes slathered with butter and then she would fry an egg and put it on top. Dad would then smother it with maple syrup and joyfully break open the yoke and watch all the yellowy center mix with the syrup and he would scarf it down.

Dad loves food so much and eats with such relish and abandon that small children have been known to stop in restaurants to watch him eat. The way he moves his mouth and the joy in his eyes I guess are like magic and little kids can’t help but stare at him while he eats. He’s kind of gotten used to it. We have pictures of almost all the grandchildren sitting on his lap and staring up mesmerized by their Tata as he eats.

So suffice it to say that my brothers, sister and I were not brought up to be open to many kinds of foods. We didn’t have any idea when we were kids and up to young adulthood what tuna was, or onions, or fish, or beets, cauliflower, lobster, crab, shrimp, or even salads. We knew beans, tortillas, potatoes and always some kind of beef, cooked some kind of way.  We knew that dad would buy a small tin of something called sardines but we never knew what they were because he had to go outside to eat them as mom couldn’t stomach their smell!

I remember one of my first dates ever with a boy and they brought me a salad with garbanzo beans. I asked him what those were and he said, “Garbanzo beans” and I said, “No seriously…what are these?” I refused to believe him and he had to call the waitress over and ask her what they were and she said, “Garbanzo beans”, and looked at us both like we were space aliens!

So I’m reading this book for my From Left to Write book club called The Headmasters Wager by Vincent Lam and the author goes into detail about a lot of the food that was served in the home of the headmaster who was of Chinese descent living in Vietnam. I tell you what!!! Mom would sooner have died than to have lived in that home.

The food talked about in this book! Wow! Man oh man! My mom would be overwhelmed and disgusted by most of it. But some of it sounds so intriguing to me. For instance:

Squabs stuffed with cave swallow’s nests, scallops in a cognac reduction, braised and truffled lobsters, sharks fin soup, braised goose, giant abalones with fragrant mushrooms and freshly spiced jasmine flowers, giant chilled crabs, raw fish salad, kuay teow teng soup of egg noodles containing eight meats and sea foods, poached groupers, fresh sweet prawns live and wriggling in bowls to be cooked at the side of the table as each guest preferred, either deep-fried or dunked into boiling water.

And that was all for just one party held at Tet or Vietnamese New Year! What a way to start the New Year! I guess it's not that different than the way we always started the New Year as far as strange foods because I'm sure to many of you the idea of eating Menudo would be a bit disconcerting right?

Menudo is a traditional New Years Day breakfast food that is supposed to have medicinal purposes in that it is the cure for hangovers.

I like the description of what Menudo is that I found at the Urban Dictionary: Awesome Mexican soup made with tripe (beef stomach,) hominy, chile peppers, onions, cilantro, oregano, and a splash of lime. Some like menudo served with tortilla and "con pata"--which means with a pig's foot in there too. Menudo is traditionally eaten on Saturday mornings and has been known to cure the common hangover.

Sciatica and the Escalator

Once upon a time there was a beautiful Princess named Sciatica and she lived in a huge castle. The castle was so grand that the king had escalators installed to passenger the queen, the princess and honored guests up and down the various floors of the castle.

Princess Sciatica loved going up the escalators but she had an intense fear of the escalators leading down. She would see  the others getting on the down escalator with no problem, laughing and joking and hanging on to the moving hand rail, but when it was Princess Sciatica's turn to go down, she would stand at the edge and tell herself she could do it, but she would immediately feel a weakness in her legs and a sense of vertigo and she knew that if she tried to take one step on those moving stairs, her legs would not have the strength to hold her and she would fall and tumble all the way down to her death!

Luckily the King had also installed elevators in the castle and Princess Sciatica would ride the lonely elevator down to the lower floors. She could hear the laughter and joy of the others racing up and down on the escalators and she so longed to join them and swore to herself that one day she would!

One day, the Princess rode the escalator to the third floor which is where her bedroom was. She needed to fetch her fencing gloves and then she quickly raced to the other end of the castle to where the King, good King Otis had installed the elevators. She pushed the down button and waited. After a few minutes, she pushed the button again and waited. Then she did what any intelligent person knows to do, push the button over and over again! That always makes the elevator come faster cause it knows your are pretty darned ticked off by now!

Yet the elevator didn't come and the Princess did not know what to do. She roamed the third floor where she found her sister Princess Lisa and her mother, the good Queen Tomasa. She was crying and telling them that she wanted to go back downstairs but the elevator would not come. The sister and the queen knew of Princess Sciatica's intense fear of the down going escalator, but they tried to convince her how easy it was and that they would go before her so she wouldn't have to fear falling. They would catch her! But fear struck the poor Princess's heart and no amount of cajoling or pleading would help. Was our poor Princess destined to live forever in the highest floor of the castle?



Apparently...yes! I know this cause it happened to me yesterday. I am Princess Sciatica!

Yesterday I went to Macy's Department Store with my mom and my sister. My mom had a gift card and wanted to use it to purchase a set of sheets for her new bed. The bedding department is on the third floor of Macys. My mom, sister and I rode the escalator up to the second floor, then the third. I had no fear going up and no worries about how I would get back down as I knew they had an elevator. Easy Peasy!

We shopped for sheets and then searched for the elevator and headed over and did as Princess Sciatica did. I hit the button and waited....then I hit the button again and waited...then my sister Princess Lisa hit the button (in case the elevator just didn't like me) and again we waited. Then I tried the old faithful move and hit the button several times in succession...nothing! Fear struck my heart! What was I to do?

My mom and Lisa tried to convince me that it's easy to get on the escaltor going down. They would help me, they would go down before me and that way if I fell I would fall on them. Aren't they wonderful to sacrifice themselves like that for me? Especially my 78 year old mother! But I knew that I couldn't do it. I no longer had the leg strength. Not since the great Sciatica Debacle of 2010!

For some reason, ever since I had that awful bout of Sciatica in 2010; where I had to take almost a month off of work because I was in the most excruciating pain I have ever had (it was worse than childbirth. I had two kids, one natural and one c-section...trust me, it was worse than childbirth), I don't have the strength in my left leg that I used to. It's hard just to climb stairs using my left leg. So I have to climb them by putting the right leg on the step first and then bringing the left leg up, then the right again, then the left. It's quite embarassing!

So there we were on the third floor. I can't use the down escalator and my mom and sister can't just leave me cause I drove and I had the car keys! We asked a couple of the sales clerks if the elevator was working or not and they really didn't know. Then I saw an official looking lady in a navy pin-striped suit and I asked her. And bless her little pea-picking heart, she saved Princess Sciatica! She told us that they were doing some work on the elevator so they were not working, but that she could take us down using the service elevator. I think she saw my elderly mom and thought she would do a nice thing for the sweet, elderly, gray-hair woman.

So she takes us through some double doors by the elevator and we're in the back of the store. And she was so sweet and she pretended like she was giving us a tour and pointing out products and joking with us. She was wonderful. Then she pushed the service elevator button and the doors opened. She then opened up this cage thing and she stepped in and said, "C'mon in!"


 We were all a little apprehensive. It looked scary. My mom even asked her in a timid little voice, "You are going with us right?" Our little Guide assured us that she would never leave us alone, "Oh nowhoney...I wouldn't leave you alone, Oh Heavens No!" So we had no choice, we walked on in. Our little tour guide then proceded to close the elevator doors and then manually pull down the gate door. Now we were in the Belly of the Beast! The elevator started. It was slower than the public elevator so it took a little while for the elevator to get to the bottom. Our little guide just kept chattering to us about various "behind the scene" things at Macys. We were almost to the main floor when my mom felt she had to make one thing clear. She turned to our little guide and she said, "The reason we needed the elevator is because my daughter is scared to go down the escalator." And then she pointed at me!


Can you believe that? My own mother threw me under the bus like that....lol. You have to admire her though, she didn't want to be thought of as some poor elderly lady that needed help getting around. Oh no! Not her, she's very proud of still being strong and independent! But dang-it...was my face red! Poor Princess Sciatica...
