We all now have a Guardian Angel in Heaven

My sister and I have both worked in a funeral home in the past. I worked there almost five years and I believe my sister just as long, if not longer. Even my mom worked there during evening and weekend visitations. We're comfortable and familiar in a funeral home. 

Yet the day when we walked through those doors as customers instead of employees came way too soon for us. 

 Yesterday morning we walked through with our hearts heavy, knowing that we were there to make funeral arrangements for our beautiful father. Yes, daddy passed away peacefully on July 30th. 

It happened so quickly that we didn't have time to get there even though I only work 10 minutes away. He was not alone though, he had his loving wife of 56 years by his side, holding his hand. He had my brother, his name sake, Federico there by his side. Within minutes of his passing the room began to fill with all those he loved the best, his sons and daughter, his grandsons and granddaughters, his son and daughters in law. 

I was amazed by dad's grandchildren. They hugged their Tata and held his hand, there was no fear of death, no one was uncomfortable, this was their beloved Tata, our beloved father, her beloved husband. It was a beautiful moment. 

Of all that happened after dad's passing that is what I will carry with me in my heart about his moment of death, that he was surrounded by love.

Do not go gentle into that good night - Dylan Thomas

Hope springs eternal doesn't it? Dad is still with us, although growing weaker each day. He has not eaten since Sunday, but he ate well then. My mom fed him, she came to see him at the hospital and he welcomed her with open arms. It was beautiful and heart breaking. She has been by his side since and I know that for me it's been healing. Something good did come out of dad's illness.

It's just a matter of time, I know that...but we all still keep looking at anything as a sign of hope, even though in reading all the literature provided by Hospice I know that he's following the natural path towards leaving this world.

 But as I've said before, he's a fighter. He will not go gentle into that good night.

I Want You to Know Who He Was

Right now I'm sitting in my fathers room in the surgical ICU after surgery on him to drain blood from both sides of his brain. He's on life support and needs so much medical care and attention.

I watch these brave young people that are caring for my dad and I want to tell them who he was. I want to tell them that this is not just a sick old man that they are cleaning and checking vitals on. 




That this man was King of the Row Crop! A man that could grow any vegetable or fruit on earth just by the sheer power of his will and his intuitive knowledge of the earth and plants. I want to tell them ...I want to tell them, do you know who he was?

There is a quote from the movie with Richard Gere called Shall we Dance where the wife says, "We need a witness to our lives. There's a billion people on the planet... I mean, what does any one life really mean? But in a marriage, you're promising to care about everything. The good things, the bad things, the terrible things, the mundane things... all of it, all of the time, every day. You're saying 'Your life will not go unnoticed because I will notice it. Your life will not go un-witnessed because I will be your witness'." 




 I am a witness to your life dad. I know who you were. I know who you are. I know what you mean to me and to my siblings and to your grandchildren. Your life will not and did not go unnoticed. Get better daddy, I love you and need you.

Weekly Low Carb Wrap Up - Week Eight?

Notice my little question mark after the title? The last wrap up I did was April 15th and that was week seven. I went a bit AWOL after that last one. BUT...I have kept my low carb lifestyle going. It's not a diet, it's a way of life so there's no turning back now! So that's about three weeks of low carb goodies I have to show you. 

To be honest, I have not had a lot of time to try new recipes. I have pinned several in Pinterest that I will be trying out in the future, but for right now my priority is being with my dad. I mentioned a few posts ago that he had taken a fall and broken his pelvis. He's in an assisted living facility and I try to visit him at least once a day, sometimes twice. On the bright side he is getting better and his break has healed enough that this next week he will be beginning physical therapy!

Just yesterday we celebrated his 82nd birthday and he was in a wonderful mood. Happy and talkative, enjoying his family and eating Nopales (cactus) which is his favorite dish. My sister made them for him and now that I think about it, Nopales are low carb, I sure wish I liked them but unfortunately I don't like them or mushrooms either.

One new thing that I have found and tried and really like are Persian Cucumbers! I love any kind of cucumber but especially these as I am not really fond of all the seeds in the middle and hate scooping them out before I slice them. With the Persian Cucumbers I found I didn't have to. They are super crunchy and I like to dust them with Pico De Gallo powder, which is very spicy and then drizzle them with a bit of lemon. So delicious and low carb. Really satisfies that craving for chips and salsa!



Another new item I tried was courtesy of my co-worker and co-partner in this low carb lifestyle, Angelica. She made the most delicious low carb lasagna! Yes, you heard right, low carb lasagna! But Alicia, you say...pasta is very high in carbs! I know, I know! But not when your pasta is made from Zucchini! This photo doesn't do this dish justice, but trust me it was fabulous!

In previous low carb wrap ups I've done I've mentioned the Easy Cajun Drumsticks that I've made and I love them, but I decided to try to make them with boneless chicken breast. My son loved them and I thought they were delicious, but I really love them as drumsticks much better. They are just more flavorful and not as dry. Served them with a drizzle of lemon to cut the spiciness a bit and steamed some broccoli. I love eating low carb!

One of the things I do miss eating on a low carb lifestyle is burritos and tacos. But I found a great new way to kinda/sorta eat a burrito and/or taco. Use a leaf of lettuce! In the photos below I show you several different fillings that I've tried and they were all 100% delicious!

Didn't those all look delicious? And so easy. Almost anything you can wrap in a tortilla you can wrap in a lettuce leaf. 

This next dish tastes much, much better than this photograph would lead you to believe. The original recipe calls them Buffalo Balls. They are from an awesome low carb website, I Breathe...I'm Hungry!



I followed her recipe almost to the letter, the only thing I changed is that I added Parmesan Cheese as I didn't have and don't particularly like Blue Cheese. They were really delicious and my co-worker/friend/co-low carber Angelica really loved them as well. You use Frank's Red Hot Sauce...this stuff is fabulous! Meatballs are a really easy way to eat low carb.

And last but not least...a low carb tip for you. A quick and easy Breakfast or mid morning or mid afternoon snack are hard-boiled eggs. I usually just peel two in the morning, cut them up and put them in a plastic container, add a dollop of mayo and some salt and pepper and head out the door. At snack time I just open up the container, mix everything up and eat. Easy, tasty, flavorful!


So there you go. Hopefully I redeemed myself from missing previous low carb wrap ups and we will see what this next week hold for me. Have a good one!

The Best Laid Plans

This post was inspired by the novel Afterwards by Rosamund Lupton. After witnessing her children's school set ablaze, Grace attempts to find the arsonist as her teenage daughter lies in a coma in Lupton's suspense thriller. Join From Left to Write on April 11 as we discuss Afterwards. As a member, I received a copy of the book for review purposes

I have to tell you that I really enjoyed this book. Many of the others in our group mentioned how difficult it was to read because they put themselves into the place of the main character Grace and her child who was in a coma, but for me it was different because of what I and my family are going through right now with my dad.

My dad who is will be 82 years of age in a little less than a month took a spill recently and fractured his pelvis. He has been residing in an assisted living facility and is slowly healing. It's been a long two weeks and I've been spending all the time I can with him. This was unexpected...of course it was, it was an accident and they wouldn't be called accidents if they were expected right?

I have always tried to make sure that if anything happens to me my kids would be protected financially. They wouldn't be rich or anything, but there would be enough for them to bury me and have funds left over for them to go to school or put a down payment on a home or something. But I've never thought about what would happen if I became hurt, in a coma or unable to take care of my physical needs and I had to be in a skilled nursing center or an assisted living facility? 

You can bet that I will begin to prepare for that now. I am learning with my dad's fall that trying to navigate the rough waters of Medicare, parts A and B and Medical and in-home health care while trying to be supportive to my dad and wanting only to spend time with him helping him to heal and not having to deal with all the other crap is tougher than you might think and I don't want my loved ones to suffer through this as well.

In the book they didn't really go into finances and insurance and how they were going to pay for hospital stays and medications, but in real life the reality of those things can devastate a family at a time when they need to be supportive to each other.

Plan people...plan. You know the old saying, the best laid plans of mice and men? Tragedy will strike all of us one day, rich or poor, good planner or bad, so wouldn't it be better to be prepared?

Weekly Low Carb Wrap Up - Week Six

Ha! Bet you thought I forgot to do my weekly low carb wrap up right? Never fear, I'm just a little bit late. What with taking care of my dad and all I'm getting a little bit behind. But I am still trying to stick to my new way of eating. So while I didn't try a whole bunch of new things, I did try two.

But first, thanks to everyone who wished my dad well and prayed for him and my family. He's getting better and stronger every day and I'm hopeful he's going to heal well and be able to go back to his little home where he has his independence.

So this week I did get industrious one night and I made stuffed bell peppers. I checked out a whole bunch of different recipes that I had pinned on Pinterest. I love Pinterest, it makes it so easy to save things you want to find later!

Aren't these beautiful? I used a recipe from Linda's Low Carb Menus and Recipes. She has more delicious low carb recipes than you can shake a stick at! I used her recipe for Make Me Stuffed Peppers! I tweaked it a bit because I had way too much hamburger meat and in order to get my son to eat what I didn't use in the bell peppers I had to make sure I didn't cook it with onion. So I browned the ground beef in a pan with salt, pepper, garlic powder and onion powder, then took out what he was going to eat and added raw red onion and Roma tomatoes in the meat left in the pan.

I also had tons of Monterey Jack cheese in the fridge, so I used that instead of Cheddar and....I used red bell peppers! I'm such a rebel! So here they are after I've boiled the peppers in water for three minutes, then stuffed them, placed them in the pan and topped them with cheese.


Here they are, fresh out of the oven. All warm and gooey. Don't they look good? I think next time I will sprinkle some diced green onion when they come out of the oven, just for flavoring.


The night I made these I ate them with a simple green salad with ranch dressing and it was so good. It's nice to have a comfort food and these definitely were that!


I took some to work the next day and my co-worker and fellow low-carber Angelica ate one and she loved it! She's not a big fan of bell pepper but she loved these and said she is going to try making them. I'm excited to see what she does cause as I've said before, she's an outside the box thinker and I'm sure she'll put her own little spin on them!

Here is the bell pepper just nuked in the microwave for lunch. A healthy, delicious and filling lunch!



That night when I got home dinner was easy because I had all these stuffed bell peppers, so I just made a quick pork fried cauli-rice (rice made from riced cauliflower...it's delicious!) My second new thing I tried this week. You take your riced cauliflower and saute it in a pan with some olive oil and butter, season it with salt and pepper and cook for a couple of minutes. I added diced up ham and cooked that another minute then I moved the whole concoction over to the side for a bit and scrambled a couple of eggs in a bowl and cooked them in the side of the pan until they were set then blended them with the rice, sprinkled green onion, a shot of soy sauce and sesame seed oil and a healthy shot of Sriracha Sauce cause I love me some spiciness. Because I am so good at eating left overs I can make a whole bunch of these and eat them non-stop morning, noon and night until they are all gone. In fact I ate one again today at lunch!

So that was it for new things this past week. Bear with me, I have tons of new recipes I will be trying and I may even invent a few of my own. But until my dad gets better and gets back home, I will be spending at least a couple of hours every day after work with him, making sure he eats and that he's not too lonely and that he know how very much I love him.

My Hero is Broken

It is said that a girl's first love is her dad...never have I believed that more than I do now. My dad was my first love and the only man I have always been able to count on. It is difficult to see someone you love get older and weaker, especially a man like my dad who has always been so strong and independent. I still see him with "little girl" eyes as my big strong dad that will be here forever to guide and protect me, my hero. But now my hero is broken; now it is I, along with my family that is having to guide and protect dad.

Dad has been having problems with his legs and equilibrium. He gets dizzy if he rises too fast or turns too quickly. Unfortunately he's not the most patient man in the world (at least not with himself) and he doesn't wait to make sure he's steady before he takes off walking so he ends up falling. His pride has kept him from using a walker or a cane, no matter how much we all nag him about it.

A few months ago he fell running to get the phone and he cracked four ribs. The Sunday before Easter Sunday while turning to lock his door before going out for his afternoon walk he somehow fell again and fractured his pelvis. He doesn't remember how he fell or why.

Dad lives alone in a gated retirement community. He is surrounded by other elderly people and he has coffee in the recreation room every morning and has made many friends there, so we had not worried much about him as we felt it was the safest place for him, and it was except for the fall.

Dad is the toughest person I know, he fractured his pelvis, reached up and unlocked his door, scooted backwards on his butt until he made it across his living room to his phone and called my sister-in-law and told her he had fallen!!! Can you imagine the pain he must have been in? She got there and immediately called an ambulance to transport him, scared that if she moved him (not that she could have as dad is 6 foot 3 and weighs 215 pounds) she might cause him further injury.

I was sitting at home on a Sunday afternoon doing nothing, looking forward to writing my post on my weekly low-carb wrap up. I had just applied hair color to my hair and was sitting in my kitchen with no make up on, wearing sweats with my hair full of hair dye sitting atop my ahead, loving that I was able to be a slob for the afternoon with no chores, errands or obligations when I got the call that dad had fallen and was in the emergency room with a broken pelvis!

Anyone that has ever colored their hair knows that you can't just run out the door with hair dye on your hair, you risk losing all your hair, so I had to jump in the shower first and rinse out all the color. I took the quickest shower of my life and my son and I picked up my brother and we all headed to Bakersfield, which is about 25 miles from where we all live.

We got to the ER room and got a chance to see dad. He wasn't in any pain at that point thanks to morphine, they were doing tons of tests on him and we waited to see what was going to happen. They of course admitted him and made him comfortable and we went home. The next day I went to work and put all my ducks in a row and told my employers that I was going to be at the hospital with my dad and headed over there.

Dad was in good spirits but a little out of it and he got more out of it as the day progressed. I blamed the morphine and thought that he would get better once he didn't need it anymore, but dad has continued to get more confused in incoherent as the weeks progress. 

We knew that dad would not be able to go back to his apartment and take care of himself. We were fortunate that he qualified to be moved into an assisted living facility. He is still there and he seems happy. He has days when he knows where he is and why he is there and then he has days when he thinks he is at work and is surrounded by the people he worked with.

Today he finally had a good day, he understood where he was and why and he wanted to know when he could start walking again. I had to tell him it would be another four weeks and even then he would have to do therapy first. But he took it in stride and said that was ok, he likes where he is and he likes the girls that take care of him and he told me not to worry about him.

He told me to go ahead and go home so that I wouldn't end up driving at night and to not worry about coming to see him if I was busy because he was ok. That's the dad I know and love and remember, the one that always thought about me first before himself! I have full faith that he is going to recover, but the fact that my hero is broken...even in only temporarily breaks my heart.

Meatball Sunday!

I finally broke my crock pot out of the box it came in when I bought it over three months ago and made those meatballs I told you about earlier this week. You remember, the meatballs I bought and then had to wait in traffic for hours before I could get them home to the freezer?

Well they made it home still frozen and today I tossed them into the crock pot along with a whole bottle of BBQ sauce and a jar of grape jelly (grape jelly is the secret ingredient that I didn't tell anyone about because I didn't think they would try them if they new grape jelly was in there).

I found the recipe at The County Cook and I followed it to the letter but they didn't look as pretty as hers, mine were a little bit darker. Maybe the BBQ sauce I used? Not sure.



I didn't take a photo of the ones I made and the results were mixed. Mom said they were ok, but she's not a big fan of ground beef. The son loved them! The daughter said she liked the flavor but not the texture of the meatballs. I'm kinda with the daughter, I liked the flavor but not the texture. Maybe next time I'll make my own meatballs.

I'm trying to make something new each Sunday. My kids keep asking for the same old tried and true recipes but I'm determined to benefit from the many hours each I day I spend pinning recipes from Pinterest!

Anyway, Friday was my company's holiday luncheon in Fresno which is about 2 hours north of Bakersfield. It was fun and I always love seeing my co-workers from our Fresno and San Jose offices, since we only see each other once a year but talk to each other almost every day. It was tough trying to gather everyone together for a photo. As you can see, I was camera ready but everyone else was too busy socializing!


And then when they are all ready, I decide to move my head so I'm a little out of focus...or maybe it was the wine?

 
But finally we get all the socialites and rabble-rousers out of the picture and get everyone to focus and pay attention and I think we came out great!
 
 
 
Each year they set up a luncheon for us at  Roger Rocka's Dinner Theater in Fresno. The cast there puts on an abbreviated portion of the show currently playing which this year was Beehive. It was so funny and they are such great singers. They also host a raffle where you can win prizes such as Kindles and Ipods and Ipads and bottles of wine and baskets of chocolate and stuffed animals and gift certificates. All the money goes to charity and sadly no one at my table won! But we still had a wonderful time!
 

 
 
Saturday my sister and I took my dad to breakfast. He had a good time and bought himself a little 1955 Chevy model car that they had for sale, so he was a happy camper to have had breakfast with his girls and a toy to play with later!
 
 
 
Then my sister and I took off for Valencia to do some Christmas shopping and share in a little sister-time. Sadly, I didn't get any pictures except the one of the Guacamole and Sparkling Pomegranate Margaritas we shared, but if I had gotten a picture, we would have been smiling because we had a great day.
 
 
 
So that was my weekend and tomorrow it's back to the salt mines. Have a good week everyone!

Back to Work

This year I took a a couple of vacation days, the day before Thanksgiving and the following Monday, which is today. That made for a nice, long vacation. I had Wednesday, Thursday, Friday, Saturday, Sunday and Monday off and I am so not looking forward to going back to work tomorrow.

Wednesday I got up early and my mom and I went into the city (Bakersfield) and had a nice breakfast and hit a couple of Goodwill Stores. My mom and I love thrift store shopping! I was searching for Christmas decor but didn't find anything. After Goodwill-ing, we went grocery store shopping for Thanksgiving items, all the pie, stuffing and mashed potato fixings.

Once we got home and put everything away it was time to make the pies. We used to make the crust from scratch, but since frozen pie crusts have gotten so much better we use those, but we do make the pie filling from scratch...well from a can but that's from scratch for us!

Thursday of course was Thanksgiving and we spent the morning straightening up the house, getting the extra chairs all ready and making the stuffing and turkey, then the family arrived and we had a wonderful meal and enjoyed seeing each other all together again.

After everyone left I spent about two hours getting everything cleaned and put away in my kitchen. Friday was a relaxing morning and then we all met in Bakersfield again to celebrate Thanksgiving with my dad. We took dad to Golden Corral because he loves buffets. I had a great time having all my family together again and I know dad really enjoyed it.

Here's the only picture I managed to get. This is my dad and on the right is my son James and on the left is my sister's son Isaac, who also is my Godson! Can you believe that my dad is 6 foot and both his grandsons are taller and bigger than he is???


Saturday I had to go and get new tires put on my car. My son James, (in the picture above) went with me. We had a great time considering we had to wait for two hours at Big O Tires! We spent the time playing Monopoly on his cell phone and I won!!! Of course he helped me to win and when I was almost losing he bankrupted and gave me all his money and property. Wasn't that nice of him?

Sunday I went on STRIKE and said I was not doing anything the whole day...and I didn't. I just watched movies on NetFlix and played on the computer and watched TV and read my book and chillaxed all day. My daughter's little puppy Chorizo was as exhausted and I was and laid on the little bed we've set up for her in my bedroom. Doesn't she look comfortable?



So today, the whole world went back to work...but not me :)

I decided to spend the day putting up the Christmas Tree and decorating the inside of the house. This year I decided not to put the Martha Stewart ribbon and garland that I love, love, love. I decided to try something different. I don't like it! Not sure if I am going to do it over or just live with it as-is for this year, but it's just too plain! I do love that where I put the tree this year it's reflected in the mirror, double the lights and sparkle....love that!


So tomorrow it's back to the real world and for once I'm not really looking forward to going back. I had a great Thanksgiving and a wonderful time being off. Can't wait for Christmas and tamale making and Biscocho baking!

FOOD...What is it good for? Absolutely Everything!

If feeding me and my brothers and sister as we were growing up had been left strictly to my mother then we would have eaten nothing but beans and tortillas morning, noon and night!! Ok, well maybe that’s a bit exaggerated, but seriously…if not for the fact that my dad was a meat and potatoes kind of man we would have starved!

See mom is a very picky eater, always has been, even as a child. Plus she doesn’t like to cook. She CAN cook…she can make some awesome dishes! She is a wonderful cook! Her chile colorado is to die for, as are her chili beans. But she dislikes cooking with a passion, probably because she dislikes eating. . .

Did your mouth just drop open in shock? How can anyone dislike eating? Well trust me she does. She eats because she has too. Food is not a big deal to her and she finds it frustrating to think of what to cook. And when she does cook she’s so sick of the smell of the food while it was cooking that she can barely manage to eat a bite or two. And leftovers?? Forget about it! She’s not touching leftovers!

My dad on the other hand will eat your arm if you don’t move it out of his way quick enough. I can remember him coming home in the mornings and my mom would make him breakfast. She would make him three or four pancakes slathered with butter and then she would fry an egg and put it on top. Dad would then smother it with maple syrup and joyfully break open the yoke and watch all the yellowy center mix with the syrup and he would scarf it down.

Dad loves food so much and eats with such relish and abandon that small children have been known to stop in restaurants to watch him eat. The way he moves his mouth and the joy in his eyes I guess are like magic and little kids can’t help but stare at him while he eats. He’s kind of gotten used to it. We have pictures of almost all the grandchildren sitting on his lap and staring up mesmerized by their Tata as he eats.

So suffice it to say that my brothers, sister and I were not brought up to be open to many kinds of foods. We didn’t have any idea when we were kids and up to young adulthood what tuna was, or onions, or fish, or beets, cauliflower, lobster, crab, shrimp, or even salads. We knew beans, tortillas, potatoes and always some kind of beef, cooked some kind of way.  We knew that dad would buy a small tin of something called sardines but we never knew what they were because he had to go outside to eat them as mom couldn’t stomach their smell!

I remember one of my first dates ever with a boy and they brought me a salad with garbanzo beans. I asked him what those were and he said, “Garbanzo beans” and I said, “No seriously…what are these?” I refused to believe him and he had to call the waitress over and ask her what they were and she said, “Garbanzo beans”, and looked at us both like we were space aliens!

So I’m reading this book for my From Left to Write book club called The Headmasters Wager by Vincent Lam and the author goes into detail about a lot of the food that was served in the home of the headmaster who was of Chinese descent living in Vietnam. I tell you what!!! Mom would sooner have died than to have lived in that home.

The food talked about in this book! Wow! Man oh man! My mom would be overwhelmed and disgusted by most of it. But some of it sounds so intriguing to me. For instance:

Squabs stuffed with cave swallow’s nests, scallops in a cognac reduction, braised and truffled lobsters, sharks fin soup, braised goose, giant abalones with fragrant mushrooms and freshly spiced jasmine flowers, giant chilled crabs, raw fish salad, kuay teow teng soup of egg noodles containing eight meats and sea foods, poached groupers, fresh sweet prawns live and wriggling in bowls to be cooked at the side of the table as each guest preferred, either deep-fried or dunked into boiling water.

I couldn't even find photos on the whole worldwideweb of most of these dishes. Here's a few that I did find.

And that was all for just one party held at Tet or Vietnamese New Year! What a way to start the New Year! I guess it's not that different than the way we always started the New Year as far as strange foods because I'm sure to many of you the idea of eating Menudo would be a bit disconcerting right?

Menudo is a traditional New Years Day breakfast food that is supposed to have medicinal purposes in that it is the cure for hangovers.

I like the description of what Menudo is that I found at the Urban Dictionary: Awesome Mexican soup made with tripe (beef stomach,) hominy, chile peppers, onions, cilantro, oregano, and a splash of lime. Some like menudo served with tortilla and "con pata"--which means with a pig's foot in there too. Menudo is traditionally eaten on Saturday mornings and has been known to cure the common hangover.
